Traditional Barmbrack Cake

1 cup Sultanas (golden raisins)
1 cup raisins (standard dark)
3/4 cup brown sugar
1 cup cold Irish tea
1 1/2 cups flour
1 tsp baking powder
1 egg beaten
1 tsp mixed spice (pumpkin pie spice is a good substitute)

How to Prepare:

Barmbrack cakes are the Irish equivalent to a Chinese fortune cookie. Traditionally made for Halloween, the cake is baked with small items concealed within. The type of item revealed when sliced predicts the future. A coin would indicate prosperity, a ring indicates marriage, a key signifies a journey, a button for bachelorhood, a thimble for spinsterhood, a scrap of cloth for poverty, etc.

To begin, mix together the sultanas, raisins, brown sugar, and cold tea. Cover and let marinate overnight.

The following day, preheat oven to 350. Add flour, baking powder, and mixed spice to the marinated raisins. Gently mix in beaten egg until mixture is well combined and smooth. Spoon into greased 7" round baking pan.

If you decide to hide special items in the cake arrange them on top of the batter and push them just under the surface.

Bake for 80 minutes at 350. Remove from oven and cool 20 minutes. Remove from pan and cool completely on rack.

If desired, glaze the top of the loaf with warm honey.
