Halloween Chicken Hash

12 oz. cooked chicken divided into small pieces

3 med. onions, thinly sliced

6 tbs. chicken stock

12 oz. cooked potatoes

Oil for frying

Salt and pepper, to taste

How to Prepare:

Heat the oil in a large pan, add the onions and fry until tender.

Add the chicken pieces to the potatoes and mash them together.

Blend chicken stock in to the mash until it is creamy then add salt and pepper to taste.

Add the mash to the onions in the pan and flatten the top of the mixture.

Fry the mixture in the pan until the bottom is crisped and browned then fold over like an omelette.

Lift on to a warmed dish and serve.
