Pumpkin Soup

1 pumpkin, 4-5 lbs.

2 tbs. olive oil

1 tbs. butter

1 onion, finely chopped

5 cups chicken broth

1 potato, peeled and chopped
2 tsp. grated orange zest

1 1/2 tsp. curry powder

1/2 cup heavy cream

2 tbs. roasted pumpkin seeds (see Roasted Pumpkin Seeds recipe under "Spooky Starters and Snacks)

Salt (to taste)

Pepper (to taste)

How to Prepare:

Cut pumpkin in half and scoop out seeds. Cut away the outer shell and chop the flesh.

Over medium heat, warm the olive oil and butter, then add onion and saute for 3 minutes.

Add broth, pumpkin and potato and bring to a boil.

Reduce heat and simmer 25 minutes.

Blend vegetables and liquid in a blender until smooth.

Return the mixture to the saucepan and srir in orange zest and curry powder.

Place over low heat and add cream.

Season with salt and pepper and heat to serving temperature.

Place in bowls or cups and sprinkle with pumpkin seeds.
