Pumpkin Gnocchi

Ingredients:
2 cups pumpkin, cooked and mashed (OK to use canned pumpkin)

2 tbs. flour

1/2 tsp. baking powder

2 eggs, slightly beaten

Salt and nutmeg to taste

Butter to taste

How to Prepare:

Mix together all ingredients. Stir well. Let stand 1 hr.

Stir again and drop by spoonfuls into rapidly boiling salted water. As soon as the dumplings rise, skim into a bowl of very cold water.

Drain well when cool. To serve, heat in a casserole with plenty of butter.
