Beat cheeses, pumpkin preserves and spices until smooth. Cover and refrigerate for 2-3 hours or until cheese is firm enough to shape. Shape mixture into round pumpkin and place on serving plate. Using knife, score vertical lines down the pumpkin. Place pretzel rod in top for stem.Cut bread into triangles for eyes and nose and place pieces of bell pepper on triangle eyes for pupils. Cut olives into slices and use to shape a mouth. Tuck parsley stem around pretzel rod for vine. Serve with crackers.
