Preheat oven to 350 degrees and lightly grease baking sheets.Place flour and 2 tsp. cajon seasoning in large, resealable plastic bag. Add chicken, seal and shake bag to coat.Combine cornflake crumbs, green onion and remining cajon seasoning and mix well. Place eggs in shallow bowl.Dip each chicken strip into eggs and then into crumb mixture. Place coated strips on baking sheets.Bake for 8-10 minutes.Place four strips on plate with thicker end of strips touching and the thinner ends separated, forming a claw. Make 1/2 in. slit in thinner end of chicken strips. Place bell pepper triangle into slit to form claw nail.
