Chilling Caramel Apples and Pears

12 bamboo skewers, 6 in. long

6 apples, stems removed

6 pears, stems removed

2 cups granola

1 cup sugar
1/2 cup dark corn syrup

2 tsp. vanilla extract

3 tbs. water

4 tbs. butter

1 cup heavy cream

How to Prepare:

Insert bamboo skewer into the stem of each apple and pear.

Spread granola on baking sheet.

Over low heat combine sugar, corn syrup, vanilla and water until sugar melts. Add butter and cream and bring to a boil. Cook for 10 minutes or until caramel reaches 240 degrees.

Remove from heat and let cool for 2 minutes.

One at a time, dip the apples and pears into the caramel, swirling to cover completely. Dip the fruit in the granola to coat and place on parchment paper or cooling rack.
