Black Cat Cookies

Posted by Hauntmistress
Serves: 2 dozen 5-6 in. cookies
Prep Time: 2 hours
Occasion: Halloween
Effort: Average

2 cups flour

1/4 tsp. salt

1 tsp. ground allspice

1/4 tsp. ground nutmeg

10 tbs. butter

1 cup sugar

1 egg

1 1/2 tsp. vanilla extract
For icing:

2 egg whites

4 1/2 cups confectioners' sugar

1 tbs. lemon juice

Yellow, black and red food coloring

Black licorice strings
How to Prepare:
Combine flour, salt, allspice and nutmeg.

Beat together butter and sugar, then add egg and vanilla and beat again.

Add the flour mixture and beat until dough forms.

Divide the dough in half, wrap separately in plastic wrap and chill until firm, about 1 hour.

Preheat oven to 350 degrees and line 2 baking sheets with parchment paper.

Roll out dough to 1/8 in. thickness. Using a cat-shaped cookie cutter (5-6 in. diameter), cut out cookies and lay on baking sheet.

Bake until lightly brown, about 9 minutes, and cool.

Beat egg whites until soft peaks form. Add confectioners' sugar and lemon juice and beat until thick.

Divide the icing into three bowls. Tint one bowl with black food coloring, one with yellow food coloring, and one with red food coloring.

To decorate:

Cover each cookie with the black icing. Allow to dry for a few minutes. Using a pastry bag with a small tip, draw on eyes with the yellow icing and a mouth with the red icing.

Place 3 licorice strings, cut to fit, on each side of the cat faces for whiskers.
